Simple question:

How are resources on a square affected by building a settlement on it?

The selected square might show a ton of pelts, indicating the possibility of automatically acquiring a lot of fur after the settlement is constructed, but the resulting center square of the settlement shows a reduced amount. What's up with that?

Founding a city removes the forest on the center plot as well as the fur bonus that the forest gave...
 
Yes it's unfortunate that you cannot gain fur resources from the city square itself, you must work an adjacent square in order to get them. Converted natives are good for that, until you are able to get a colonist or two trained as specialists.

Tundra actually gives 2 food and 2 fur. Although 2 isn't a great amount for food.
