How often do you give in to the AI's demands?

.... Of course with Gandhi's, never. Otherwise though?

It depends on how much I want them to be Friendly with me. In my current game, I gave in to every one of Shaka and Qin's demands because they were my neighbors and had big militaries, while I had only a so so start, for a long time. Now, much later in the game, I have teched way ahead of them, my military outnumbers Qin better than 4 to 1 and Shaka between 2 and 3 to 1. So, I turned them both down for tech "gifts", in lat few turns. If they get p.o.'ed and declare war on me, they'll be toast. So, I'm not too concerned anymore. Since I am going for a space race victory in this game, I won't DOW on them.

BTW, in this game, I'm Ghandi!

Getting a tech demand from an unfriendly AI can be the best thing that can happen to you. Up to 5 diplo points, plus 10 turns guaranteed peace.

I almost always give into tech/cash demands unless it will cause problems with "worst enemy" trades. War demands I only consider if the target is already in serious trouble (and not on my borders ;)). Civics/religions I reject unless Spiritual.

My rule of thumb is to give them what they want if it is money or a resources - these things are usually relatively low value demands and so are basically just a cheap way of getting some diplomacy points... if they ask for a tech, I'll only give it to them if most people have it already, or if it isn't something that they could hurt me with. I wouldn't give them a cutting-edge military tech, or an expensive tech that I hold exclusively, or a tech for a wonder that I've just started building.

It doesn't matter much to me who is making the demand (unless I'm really scared of war with them); the most important thing is what they are asking for.

The higher I go in difficulty, the more likely I am to do so. Unless it's something pivotal like Alphabet early on when I haven't traded it around fully. The difference between the negative and positive diplo from refusing/accepting can be enough to change the course of a game. Also guarantees they won't declare on you for 10 turns

That is extremely bad advice. Caving in to a demand form a AI might put you in bad terms with a third AI, that can be a far bigger threat than the AI that actually demanded stuff from you... the real question is if someone is going to get pissed because of your awnser/ the value ( in global terms ) of the demanded stuff.
