Spy missions

What are the spy missions you can do ?

I know they are available when somethings happen: sometimes you cant spread culture and sometimes you can.

However, how can you influence civics or religion ? I was never able to change them.

Perhaps the quickest answer would be to refer to the Civilopedia;

To see Espionage in practice, you might enjoy following some of the Succession Games with an emphasis on Spies; "RBtS1a - The Thief Economy" and "RBtS1b - The Thief Economy" are two that look particularly at Technology Theft.
