While I can manage (okay...) I usually end up against the odds. I play emperor, but that's besides. What is a good composition for an industrial-on stack?

infantry+artillery, plus a few anti-tank for stack protection.

yeah, but it takes 10/8 xp for rifles instead of 5 for cav, and the cav get the stables to make it really easy to get to 5. but yeah, a pinch rifle would be a lot better.

Honestly if you're making a big stack invasion like that you're probably going to wipe most of their counter forces anyways. The real reason for riflemen is because that's what drafting gives you, and getting a ton of units really fast is just awesome.

I agree with you actually. Pinch cav is a bit better. But OTOH, I do like to keep a couple of (cav)rifles to protect my canons, just in case some sneaky individual uses pinch cavs. It's really fun in LAN play with my sons. They usually like to go for pinch cav, and the howls of anguish when they run into my rifles brings a happy tear of joy to the old mans face :satan:

If I go cavalry, then I just skip cannons. You can hit earlier and you have a 2-move stack. Airships can help when the AI starts fielding rifles.

With cannons you just bring with you everything you got. When the enemy is redlined by cannons those old obsolete units still works. Those slow 1-move stacks with siege as main unit is more about quantity than quality.
