1 ) Could you please very expert players teach me how to use such mission ? I always see that its prize is more than its income, risk excluded.

2 ) How do you steal technologies ? I find that its relative spy mission price is definitely too expensive...for instance I have never had 8000/9000 in my treasury even on lower difficulty levels.

well the cost is not in gold, but in espionnage point which you can generate with the slider after discovering alphabet :o

As soon as you discover Alphabet, go to the espionaze screen and focus all the espionaze points in one oponnent (preferably one that is close that you have open borders and that you share the same religion, all that reduces the cost of stealing techs).

The make a 2-3 spy units, zzz them in the closest AI city for 5 turns...and steal anything you want.

The funniest thing I've tried is the option to steal treasury:

Steal treasury
Will steal 1:gold:
Cost 4 :espionage:

That was with the stationary spy and a significant lead in :espionage:. What a ridiculous ratio...

Very bad is that failed ops do not cost any point.

Steal tech costs the base cost of the tech (find it by mousing over the tech in the tech tree screen) +50%. This number is reduced mainly by Open borders (-20%), sharing religion (-25%), stationary spy (up to -50%), and ratio of spy points (+/-%). Generate some great spies (Great Wall) or up the spy slider to get a significant edge on spy points and fiddle around with it. It is nice for picking up techs when you dont want to trade, cant trade via WFYABTA, or techs that are off your optimal path.
