Trading with Civs

Okay, I can’t tell if I’m being screwed or what but here is the deal:

I have extra iron ore and wine to trade with fellow civs. I made a deal early in the game with England, China, America, and the Aztecs for a fee for both or one of the aforementioned resources. However, since the trade (a long, long time ago) there has been no end to the deal, and no chance to up the stakes. I want to put the screws to these guys and it seems as though they are getting the goods for free now. Is this a glitch? Should I start a war with each and force the deal to end?

I need to know how to lookup each civ and what I am trading them, is this possible? Is there a way (without cheating) to see what wonders each Civ has and where? I am trying to plan which cities to take but I have no idea which ones have what.
