Do you loose those hammers?

If you change back later to what you were building, is it quicker?

Do the hammers apply to the new thing?

it depends what it was, a regular building just picks up where it left off when you go back to it and a wonder that you abandon before an AI builds it has the production you used converted to gold once the AI builds it. i think if you're in the middle of a wonder and the AI builds it first you just lose the production but it might be that the production is carried over to the next thing. i'm not 100% for sure but i'm pretty sure it's the former

For buildings and units, the hammers are not lost, but still applies to whatever you were building. If you then change back, your progress isn't lost. They do not, however, apply to whatever you've changed to.

For wonders, the same. If an AI beats you to a wonder (after you've changed production), your spent hammers will still be converted to gold.

So, in short: No, yes, no.

The production invested in wonders, in case AI beats you to them, is lost, however, you get compensation in gold. With other things your progress is saved for 10 turns, after that point you start losing some hammers, but not much.
Something I've noticed recently: a unit production stopped due to losing strategic resource and the progress wasn't saved. When I got the resource back, only couple of turns later, I had to start building it from scratch. I can be wrong here, though, I wasn't paying too much attention, since it was negligible and lots of other things were going on. But I think that's what happened. Can anyone confirm/refute?
