I can't seem to find this in the manual, I think acoustics is one, and horseback riding?

Are these listed somewhere?

Best bet is to pull up the tech tree in the game. (Click science beaker, click option to open tech tree.)

It should be pretty self-explanatory from there; scroll right to see the entire tree.

Ah, so it's not individual techs, it's any tech from that age puts you into that age?

Yes, according the the bar at the top listing the ages.
