What to do with the workers???

Hi, I'm playing on Prince at the moment. I'm in 1856 AD and have nothing for my workers to really do. I start off by connecting up resources, growing farms and the odd trading post to boost gold. I can't build any more roads as its draining my cash. What do you guys do later on? Maybe start tearing up farms that are not needed or start to specialise a city? Any help appreciated! I feel like I'm not maximising my empire at present.
 
Replace farms if needed (TBH i pretty much never do this as i like to always grow), sure.

If i have improved every single tile, and every strategic resource is uncovered/worked, i usually chop any trees outside my working tiles radius for a little bit of extra production (if i didn't already do that before).

If you are in war (or planning to be), or plan to settle other cities, or still have to discover oil, aluminum, uranium, or plan to build railroads, etc, i keep at least a couple workers around.

I do tend to delete a good number of workers throughout the game to keep unit costs down unless i have a ton of GPT.
 
If you can afford them, keep them, you'll want them to build railroads. I also build invasion roads, convert most conquered tiles to trading posts (for puppets), so I usually have enough to do. Start a war, conquer some cities!
 
Once I can build a worker in one or two turns I just delete them. Also if you're conquering you can delete most of the ones at home as you'll start collecting more on the war front, which can be used to build roads for your army and trade post spam the puppets.
