What's the best program for ripping CDs?

In terms of quality of the .mp3s, that is. Though I'd also somewhat like to have something that would automatically adjust all of the track numbers for when one album is multiple CDs.

I assume you mean an encoder. In which case LAME is generally regarded as the best, but all are good. EAC is generally regarded as the best CD ripper. Hydrogen Audio has a good guide to setting EAC and LAME up.

If you have Windows you can just use WMP as it uses the Fraunhofer mp3 codec, IIRC. Or you can use iTunes if you have it. Of course it also depends on the bit rate your using for your encodes. Above 128kbps (VBR) mp3 gets rather transparent.

Also, depending on desired bit rate and needed compatibility you could look into using AAC, HE-AAC, or Vorbis for better quality (at bitrates <=128).

Check out http://www.hydrogenaudio.org for more info. They have tons of info on their wiki and the users in the forums are nice, although they'll probably ask you to ABX.
 
Personally, I use CDEx, but not sure how well it'll work for your uses. Has the advantage that you can rip directly to WAV, or have it encode for you.

I've also heard LAME is a good encoder.
