Why do I get mail that isn't for me?

I get a whole bunch of spam (unfortunately), but most of it is filtered out by outlook. What I find strange though is that quite often my email-address isn't the one found on the mail. Usually it's for someone else on the same server with the same first name as me, but with a different last name. I'm not found in either "To" or "Copy to".

If I view the headers for the mail though, I am found as the "X-Original recipient". Why is it this way? Did the senders originally intend to send it to me, or was it put in there along the way or something?

Here's one of the headers (the addresses are marked in bold). I don't know how each server adds to these headers, but it seems as if they add it on the top, and if so, then my address must have been added somewhere in the middle when my ISP first received it.

I'm no expert at this, but does this happen to anyone else, that you get mail that isn't for you?
