Is there any easy way of testing whether wonder splashes work, short of actually building the thing in-game?

Just make a change to the editor that there are no prerequisites and the cost is 1 shield to build, you can start a game and build it in one turn.
If you have the palette and size correct you should have no worries, but if you are unsure, the above is what you could do.
