Actually, I would probably settle 1NE from where the warrior is. Give fresh water and you can work an extra grassland tile, which is superior to plains tile. And since you're creative you won't have to wait long to pop border to include the cows and the seafood.

You can win a diplomatic victory with the AP but for that to happen the AP religion has to spread to every civ in the game, not every city though, one city per civ is enough.

No, any game lasts until someone (AI or player) achieves a victory in one of the different victory conditions. Therefore the game (with time victory off) will continue beyond 2050AD as long as none of the other victory conditions have been met.
Without mods the game can only handle 18 civs, so if there already is 18 civs in the game, you can't create a colony. And it doesn't help to destroy civs either, once 18 different civs have made an appearance in the game, the limit has been reached.

A little trick to spread religion to someone in theocracy is to gift a missionary to him/her. Theocracy only prevents others from spreading non-state religions to your cities, or in this case his cities. He'll most likely use the missionary you give him in one of his own cities.
