A Venetian civ would embody the Medieval and Renaissance periods with a mercantile focus whereas an Italian civ would probably be post Risorgimento. A civ based on Emanuele's unified, industrializing Italy would be very different than one based on Venice.
Despite not voting other, I would like to see the Swahili culture added as an amalgam akin to the Celts or Polynesia. Other than that, I believe these civs are inevitable:

7. Indonesia (Majapahit? Srivijaya?)

True.. I was thinking of the battle of Thermopylae at the time, but I suppose it was the terrain that was responsible for the Spartan (tactical) victory. Maybe a 10% defense bonus would be more appropriate.
