Great General - Seru Epenisa Cakobau - united Fiji.

Great Statesman - Haalilio

Great Artist - Paul Gauguin - I know he's French, but he was very important in introducing Europeans to Polynesia and it's people and culture.

John Pule - Prolific Niuean artist.

Great Scientist - ?

Great Prophet - Elekana - spread Christianity to Tuvalu.

Great Merchant - George Lewis Becke - famous Pacific trader in the 1800's.

Great Engineer - ?

Also note that I am using a map of what is techincally polynesian. Also, I will only use people who are ethnically from these regions. For example, if they are of British descent, they will not be on here. Though, they might be polynesian but have an English name, especially around New Zealand (which is polynesian).
