Though I played and won on Monarch and Emperor, I dropped down and stayed at Prince level. I like the early game of building and expanding, and with all the AI bonuses at higher levels it was too frustrating for me and not as much fun. I'd rather maximize my fun than just be able to win a game.
You say you wish your early game was better, but to me you just have to be patient. Usually, I went for Conquest, and made myself wait until I had the right techs and units, before I started a war. Of course, you need to build up a certain defensive force early on, or the AI will attack you and then you are screwed.
