It depends on a great variety of factors, including map size, targeted victory condition, size of the starting island, etc....
 
I suppose since I play mostly on large size maps, and play typically a domination-style game, I end up capturing all enemy cities and end up with 100+ cities easily in a game before I reach the 66% population/land domination limit.

once when I played on a huge real world map, I ended up with over 200 cities, took forever to get through a turn -- it gets way too complicated once you reach around 40+ cities and I will just let the AI manage my citizens and cities since it's just too much effort to manage each city for the sake of a game :)

200 cities is still manageble. It really gets complicated once you start approaching the hard-coded max city number (512). When you're doing a HoF milk the AI is left with one city and you get to fill 66% of all land and coast tiles with your territory. So it's very well possible to end up with a little over 500 cities on a huge archipelago map. :)
 
I play small maps so I build only few, 1-10. But how many cities I conquer, now that's a different number! :D
 
I always play huge maps and end up with 100+,maybe 200+. Never counted them for a precise figure but I defintely don't restrain myself in building/capturing more and more and more. How else are you gonna dominate the world? I use fort cities a lot (building on or in rival borders to cast your cultural borders over the land approaching their cities so your troops get to a certain spot faster) when conducting war so this means even more cities, even if they are to be abandoned later.

First I've heard of the 512 figure. It's just confirmation that you can build loads more cities.

While I on average only build about 25 cities a game, I conquer many more than that.
 
The most cities I've built/captured: 509
The least cities I've built: 1
Most of the time, I'll be somewhere inbetween these two values.
 
Depends a bit eh.

In a fast conquest, i usually build a core of ~20 then conquer many more, then build probably around 50 more cities to fill the gaps and get to domination. I don't think i get over 100 usually there though.

For any other victory than a fast conquest, as many as possible. All ground outside core should be ICS. Possibly for culture, possibly for scientists, possibly for taxmen.
