Which civ would you prefer...

Ottomans (SCI & IND) UU = 8/3 Sipphai (calvary)
Iroquois - (AGR & COM) UU = 3/1 MW (horse archer)
Dutch (AGR & SEA) UU = 1/4 swiss Merc (pike)
Byzantines (SEA & SCI) UU = 2/1 dromon (galley)
Japan (MIL & REL) UU = 4/4 sammy (knight)
Rome (MIL & COM) UU = 3/3 praetorian (swordsman)
China (MIL & IND) UU = 4/3 rider with 3 movement (knight)
France (IND & COM) UU = 3/4 musketeer (musketman)
Germany (SCI & MIL) UU = 16/8 panzer with 3 movement (tank)
Russia (SCI & EXP) UU = 6/4 cossack (calvary)
Mongols (MIL & EXP) UU = 4/2 keshik (knight)
Celts (AGR & MIL) UU = 3/2 Gallic Sword 2 movement (swordsman)

Wouldn't France have a 2(1)-5-1 UU on C3C ?

I like France and Iros for the traits, and dutch for the morale quality of the swisses. Cheap 4 defense units that threaten to GA their arses up should they come too close, at and beyond knight time. If we want to play diplo, this is definitely a choice to consider. France also has a bit of that quality, and Iroquois MW generally hold their end of the bargain - if it ever should come to only that, MW are awesome pre-emptive strike "fodder" with 3 attack for 30 shields.

About sammies, they're nasty but getting a knight UU is like demanding your neighbors to gang-rush you with horses ASAP.

If we get this choice I'd say science and ag.
Samurais would be my UU choice.
 
AGR+IND for me with musketeer or sammy, depending on how we "want" the game to turn out.
 
AG+Sci or AG+Comm...Sipahis would be my favorite UU otherwise Chinese Riders.
 
Riders or Sippahi or MWs would be the best.

In the event this was a 5 chooser, I think it's safe to put the chinese riders on #5, they have quite a fan club.
