Is it enough to just conquer the holy city of Catholicism?
Because researchng Theology is not really an option,because it takes too long before it's automatically founded in Jeruselem.

No, you have to found it yourself. It's definitely possible to research Theology in time. Hint: your UB allows you to hire priests.

last time I played ethuopia it seemed impossible as well(emperor difficulty) but I managed to grab a city from egypt with some wounders that produced great prophets which allowed me to pop a prophet and then get theology
