Besides the regular civ-fanatics-hosted podcast "The PolyCast", there is also the podcast from TheCivShow, a 3-person team who also regulary streams Civ6.
Their last episode features @Andrew Johnson [FXS] , and they talk about his work on Civ, what a historian and writer does for Civ6.
The description from Spotify is the following:

It's important to remember that the Civilization franchise is primarily a computer board game. It's abstract content serving game mechanics is inspired by history in a fashion similar to children's books with animals being inspired by nature (but learning to talk being their primary purpose).

This is exactly right. It's still cool to see how the legacy of a leader inspires how their in-game ability takes shape. The story about Ludwig I thought was really cool to listen to
