The sun will never set in the east. Our cardinal directions are based on the rotation of the planet. In space, there is no up or down, nor north and south. Whichever direction the sun rises from is East, and all other cardinal points are based on that. If the planet spins in the "other direction", we would just flip the poles so the sun always rises in the east and sets in the west.
