Favorite things to put in an omelette

Cheese, peppers, tomato, onion, squash.
Apples and Brie.
Feta and basil pesto.
Blue cheese, salad olives and caramelized apple slices.
Smoked salmon, cream cheese, sweet onion, dill and capers.
Leftover pizza toppings.

We also have something here called "egg-cake" (æggekage) with a lot of potatoes (and pork belly, tomatoes and chives) more like a tortilla español.
