How to keep non-faith pantheon?

Are there any tips for holding on to a pantheon that doesn't grant faith, such as God of the Sea or GoP?

Also, how viable is it to get and keep a religion without pantheon? Is Stonehenge a must-have in this case?

Pantheons have short lives -- they exert no pressure (not even "self-defense" pressure), so they rapidly succumb to other religions. And pantheon survival has nothing to do with whether the pantheon generates faith (faith is no defense).

You must have a pantheon to found a religion (if you are able to found a religion without a pantheon (such as by generating a Great Prophet from the Liberty finisher), you will be required to pick a pantheon). Once your religion is founded, your pantheon belief is incorporated into your religion as one of your beliefs.

If you want a religion with a non faith pantheon it really depends on the difficulty. On lower difficulties I think you can get away by adding the shrine early in the build order for all expos. Stonhenge can help a lot, but on higher difficulties it is difficult and costly to get. You can also beeline theology and try for Hagia Sofia but it might be to late. Basically unless there is some neat advantage you get like having Uluru around, if you get a non-faith pantheon you just milk it while it lasts. A pantheon is worth it even if you don't get a religion (it the terrain is difficult you can just get God-King and it will still offset the cost of the shrine)
