I Spent quite some time searching for them and since I didn't found the correct information, I thought it could be valuable to some of you.
If you want to manually delete Civ V (bought on the app store) save files, on MacOS Monterey they can be found here :
/Users/[username]/Library/Containers/com.aspyr.civ5campaign/Data/Library/Application\ Support/Civilization\ V\ Campaign\ Edition/Saves
I have no idea whi the path is so complex, but here it is.

~/Library/Containers/com.aspyr.civ5campaign/Data/Library
is what Aspyr Cust Support gave me and it works.
You don't need to add your username if you're seeking from your main HD directory-- just start with the tilde character (~).

Drop Down from GO option on the same Navigation bar that has Finder, then select Go To Folder and type in the above path.
My OS 10.14 keeps that path as default now because I don't use GO for anything else.

This path leads you to the whole shebang:
Application Scripts
Application Support -- Civ V Campaign which has subfolders for Maps, MODS, etc.

Finally scroll down to Saves. You can delete, copy/paste, duplicate, etc. Also dump your Auto Saves.
Very handy for cleaning out dozens of saves during your game -- the in-game Load Game menu makes you delete one by one.
