Is there a way or a mod that can extend the amount of Civs I can have in a single player game?

Yes there is, just look in the mod forum. It's a modded .dll file that allows 32 civs (I think).

There are 34 nations in the game. Two links:

40 Civs to allow for all 34 + potential colonies.

or

34 Civs for all 34 nations available at once.
