Actually this kind of thing should have been added as one more of the things you can choose in the custom game menu.

I agree. I sometimes get sick of forever researching new stuff and I just want to play a simple specific era game limiting the weapons to that age.

Maybe some clever modder will pick up on this idea and make it so.

If you choose Custom Game you can enable/disable the technology progress by a gameoption.
