Theres a founding father that gives my natives 1+ stregth?
What exactly does that mean? Only other units I can find in civilpedia that have stregth is ships?

Also soldiers seems to get alot more bonuses then dragons? Is it better to just use soldiers unless you need a the fast movement?

I think it will apply if you hgive your natives a perofession that has strength (Soldier).
I never had the dude however...

IIRC, Converted Natives can't be soldiers, you have to train them in a profession first.

Every unit, including converted natives, can defend when in cities (Do they have to be fortified?). The base strength is 2, with that FF converted natives are then 3. Overall, not very useful, as all my military always has real guns anyway.

BTW, all units in military professions have strength (in the civilopedia you have to look under professions). Soldiers are 3, Dragoons are 4.
