Most civs are happy to take some of their cities back: sell a few of your farthest and least valuable captured cities back to a conquered civ, reducing unhappiness, and use money gained to rush some happiness buildings in your core. Just don't sell the capital, and you're still golden for...
Actually, it's a little embarrassing, but my best score came from a Shaka-Impi-rush game. Conquest at like 1000BC (On Marathon) and a massive score. My economy was a little rough around the edges though.
I think you should go for Civilized Jewelers. The only thing better than having a lot of gold and gems lying around is having lots of golden rings and diamond jewelry for Midas to wear.
Some ways to get into the habit that I know of:
Limit your buildings to granaries and barracks, drydock (although you likely won't be getting to a drydock if you're doing things right).
As said before, play Pangaea and use a warmonger.
I always make sure at least one of my transports have the medic promo so that my marines can be healed on the way to their next location. It works even better when playing as the Americans!
CreeDakota's got it. Attack Monty, eliminate a crazy you can't control, get money from razing cities and experience for your troops, and use both of those to slingshot into Germany after you've upgraded your troops.
Some foresight right now is in order Mad; make sure you know what religion you want to be in by the end of the game so that you can take that holy city last. Theocracy doesn't look like it's going to be useful for this game what with so many religion changes, but organized religion should pay...
