When I'm playing in about medieval/renaissance era I just get too tired of all these what do you want to build/research next and I don't know what to do with my workers and I don't remember how many cities do I have and everything pretty much falls apart.
Are there any reminders what to do next...

I never went for it. I thought it's a big waste of beakers especially if you need to research hunting first. But if you don't have horses or copper barbarians (sometimes even aggressive civs) might be a serious problem and I screwed up a lot of games because of them...

it's kinda hard for me to understand how does this commerce/gold thing work.
so all the commerce from tiles goes to research, right? and gold comes only from shrines and trade routes? am i right?
I have a question.
Can I make ONE city to produce just cash? When I'm opening the city window and trying to put research slider to 0% all my cities start to produce 100% gold. What am I doing wrong?
