In regular RFC stability is to a large extent based on historical expansion areas, which almost requires checking maps outside the game. In a random world, will this be randomized or completely ignored? If the latter, will stability hits from overexpanding be less of an issue than in the normal...

I'd say none of the above. I'm not even sure what to think of the Eastern Roman Empire in it's day. In my opinion once the Western Empire disbanded, the legitimacy of the emperors went with it.

So many civs used Cataphracts before the Romans did that it hardly qualifies as unique to the Romans. If anything it should be a second Persian UU.

I just got a 17k with Arabia in 1535. I have never managed to do Persia on Monarch, but that will probably be the only civ able to beat the Arabs.

I have a save with the 2 churches built if you want it (World Wonder: -1 left), but I think you have a different version so its probably pointless.

I was told to report in the bugs thread so here goes: In my current Turkish game I own the Church of Nativity in jerusalem so I was quite surprised to get the message that the Germans built it as well (in Rome I guess). So now we have 2 churches according to the Wonder screen.

By that logic Alexander the Great never accomplished anything either. He died and his empired shattered into warring factions...Napoleon, Hitler, any leader who ruled through cult of personality had empires that collapsed after they were gone. Should they be excluded as civ leaders as well...
