Vikings, no doubt, they've always been a blast to play in every Civ.
I'd also like to see Spain make a return, and the Celts, and maybe something fun like the Dutch. Need more Renaissance civs, imo.
But I understand with 5, as with everything else, they were cutting off the fat and broke...

England is fairly empirical and I still see Montezuma going nutso on folks. Napoleon is also quite the fan of conquest.
Edit: Heck, pretty much the only civs I've never seen be too blood thirsty are the ones they or myself are always taking over.
It's because you're not supposed to fortify that frequently. Only specific units in specific situations, its a strategic action instead of a halt. Alert is the general 'have a unit stay put' function.

Ultimately what I think I enjoy on the whole about Civilization 5 is that it is very much 'back to basics' and a reinvention of the series. It stripped out all the B.S., the extraneous, the draconian, the archaic and went back to the simple concepts the series was founded on.
