I agree the Netherlands can be a situational Civ but usually even with a capital that doesn't have opportunity for Polders, you can often build some Polders in your second, third or fourth cities assuming you're not playing on some weird map that's designed to be all plains or tundra, something...

Probably the most odd thing I ever saw happen... I was playing a Deity game as Egypt I believe , it was currently before the Renaissance era even and a Shoshone city, one of there biggest as well (Agaidika) ended up flipping to my Civilization. It was the only time I had seen a city flip before...

I believe Siam has an ability where any units he gets gifted from city states will have some XP already on them.
Also I think when Hiawatha gets railroad his ability where his forest tiles act as roads will now have the effects of a railroad. But idk this is sort of a given not really hidden...
The game does this but because of the map there sometimes isn't always a great spot for everyone to get your start bias, I notice if you mess around with the resource settings (like make more on the map) then the start bias works less I found.

I'm by no means an expert, I just played my first deity game and won but I just never found the AI to be smart on lower difficulties, they rarely fight or even expand well and when they do fight it's easy to out maneuver them. Getting the tech lead is simple and you can get almost every wonder...
Just started Deity myself and the killer instinct aspect of the AI is the biggest challenge like some here said. But in playing Poland (OP) and I got Salt start (no re rolls either) with Lake Victoria 6 tiles from capital and I'm isolated from the rest of the continent by a span of 4 mountains...
Culture always do my best, Tourism it depends if I'm probably going to threatened by losing to someone else's culture or ideology if going for a peaceful victory myself. If Brazil is in the game and is the only culture focused AI and I don't do something that's bad times.
