The Steam client has been updated to 64-bit on the Mac, but you only get it on a brand-new install, they don't push it out as an update to already-installed versions. I'm on the Catalina beta and it works as well as it always does.
Map size and number of active civs seem to be the big factors for RAM usage, and each expansion ups things too. So of course it gets crazy on a huge map. Run a Duel map with 2 civs on base mode (no expansions) and it'll probably fit in 4GB.
Give it a unique name in World Builder in the Map Details window (the button at the upper left opens it, then click the Text tab) and save it. You'll see it in the list of maps when you Create Game right alongside the Firaxis ones.

Yes, mods are compatible across Windows/Mac/Linux. However the tools are typically Windows-only so a copy of something like Parallels or even a full-on Boot Camp setup wouldn't go amiss.
