from what I can tell there is no way to change the default settings for quick play. I play on 6 -7 difficulty and I usually do shuffle civ map but if you do a quick play game it always starts you out on 4 difficulty and I think continents. I may have missed it but is there anyway to change this?

Yes I do the same been doing it since 5. Canals could work the same way the Great Wall works for china. However I would prefer if they acted as roads and provided gold and food boost rather than allow the oassage of battleships and destroyers TBH
