The AI difficulty is whatever the lowest human is set to. If you're immortal and he's king, all AI are king difficulty. I recommend you just go with both of you as immortal since you'll be there to help him.
Either beeline bombers or nukes.
I personally prefer massed bombers (WWII, not WWI) to nukes (assuming you have the oil to build enough)
Build up a carrier fleet with escorts and bombard the crap out of them from max range.
To be fair, they have an actual team dedicated to multiplayer this time around (the first time so far for Civ V) and say they're actually going to deliver Pitboss, which should do wonders for the multiplayer community.
Just a shame they didn't release it with Vanilla like it was supposed to...
My best suggestion would be to find a 6th player so you can do 3v3 or 2v2v2. Adding in an AI for one of the teams really is no solution, as they do not coordinate with you in any way shape or form.
Players can pool gold, give each other excess luxuries as well as transfer ownership of units...
Quick speed, quick movement, quick combat, turn timer on.
Pangaea is generally the most entertaining for a free-for-all; Skirmish if you're planning on playing with two evenly split teams.
Or Siam with a bunch of maritime city states allied. Played a No Quitters game recently where someone playing as Siam got a bunch of those allied, and in addition to the cities' own very good food production, quickly had a size 30 cap and three size 15-20 orbiting cities.
Certain map types have a team start setting that will ensure that team members start close to each other. Skirmish, North vs. South and East vs. West -- perhaps also Hemispheres.
These map scripts are all only designed for 2 teams though.
One point the OP didn't touch on that I think is the biggest determent of deity is that it absolutely requires gaming of the AI. You must exploit them for gold early and often -- this is simply not fun (at least for me).

The only way to increase the difficulty is going to be to raise the difficulty level of all human players. I realize it's the obvious solution, but it's the only one you're going to find.
Do they have objections to doing this?
I hope they announce that they will finally be delivering on their promise of Pitboss (promised for release at launch of the base game two and a half years ago)

Giant Multiplayer Robot is great and all, but until a game can go from being played in 12/24 hour turns to simultaneously when all involved players are logged in I will not be satisfied.
