Custom AI Difficulty Level

One thing I always wanted in Civ 5 and now would like in Civ 6, would be the ability to create a custom difficulty level for the AI. One thing that always frustrated me in Civ 5 was that some of their bonuses would out pace my own personal abilities. For example most of my games in civ 5 at king level or greater, I would usualy outpace the AI in techs by the late stage of the game. But if I chose i to high of a level then they starting getting bonuses in other areas which make it less fun for me to play. So somesort of menu which would allow you to decide what areas of the game the AI would get bonuses would be nice.
 
To expand on this, I currently been playing Civ 6 at King level as I learn its mechanics. While the AI gives me a good enough challenge early on, by middle to late game I have taken such a huge tech advantage its no longer interesting. So I have tried some games at Emperor level, but so far not good. In one game I had Sumeria as a close neighbor, and before I even had a chance to build up a respectable army, or even walls, he came at me with 8 war carts (and that is just what I could see). Needless to say it was game over. So I would find it nice if I had the ability to choose what bonuses/penalties the AI would get. For example I would slow down his unit production yet give him a science boost.
