There are many ways, including peaceful approaches, but I like to get the Japs against the cheating AI on deity.
They start with the wheel, so if you see horses and wheat near your starting position, dang, you won. Just get horsemen with the rush technique and chop down all the techs your neighbours have.
Aztecs' jaguar warrior rush is another good idea, too bad you can't crush more than 2 civs with them. Things are so fast on deity, that feudalism appears before the ADs.
It's all a matter of starting pos. If you get a sucky one, even the regent level can be a problem. I got a map in which the Indians had iron and horses, and the Persians none, muahahaha.
The Persians are cool too. Research iron working and if you see some iron, rush a dozen immortals and be happy. But I don't like 1 move units. If you do, Roman legions are another fine choice. I'd rather go for Iroquois' mounted warrior or even the Egyptian war chariot. Too bad they aren't miltaristic, so if I wanna have fun, Aztecs and Japs are mandatory for deity, at least to me. Maybe China and German can do the trick too? I don't know of another way of getting up to date on tech but to force them to give it to me. Don't try to research it yourself, they're way faster until the industrial age.
