Has anyone seen a list of when the different trade commodities are made available? I found the tech-tree at Cradle of Civilization, but it listed only two, oil and uranium. Is it possible that these are the only two that require technologies to unlock?
 
You can go into Cheat Mode, then create a caravan or freight.
Then hit "Edit unit", click on "Change caravan commodity" on
the popup, then a dialog will appear listing all possible cargos.
 
Thanks, Serutan, I was gonna have to find out how to do that anyways.

What I'm referring to is that some of the commodities can be made only when certain technologies have been reached- ie, uranium can be demanded and offered when the civ of the city in question has discovered nuclear fission. Ditto with oil and another tech, industrialization I think. My question is: Are these the only items that depend on techs?

Yeah, I'm pretty sure that's the case. The other items all make a mass appearance with Trade. Carl Fritz's CivCity utility allows you to change a city's trade commodities, but don't waste your time - values are recalculated every turn.
