Here are usually my choices.

Domination: Autocracy.
Why: Usually the latest you'll be conquering is industrial era with cavalry/artillery. So units bonus feel better than the factory boost from Order. Happiness is on par between both trees.

Science: Order, sometimes Freedom if no Coal.
Why: Usually you'll take order for the factory science boost which make a better job than 50ish turns of better specialists from Freedom. However in some games, especially at lower difficulties you can end up in a situation where there is no immediate access to coal (for like at least 30 turns). In that case Freedom is just better.

Culture: Order sometimes Freedom
Why: The double bonus from Order can give you the bigger modifier of the 3 trees and a lot of AI tend to chose Order. On the other hand sometimes you'll reach ideology way ahead of the AI, in that case it's just better to go with freedom for the simple unconditional bonus especially if like for science you are in a no coal situation.
 
If you're best cultural opponent has already taken Order, how should this effect your decision of Freedom or Order? For example, in my current game AI China is #1 in cultural influence and is my primary competition for a cultural victory. They just chose Order. I pick an ideology in 6 turns when I reach the Modern Era.

Should I be more inclined to pick Order because of the influence effects of Order on Order. or should this make me want Freedom even more to avoid the Order to Order influence?
 
I'd think the more cities you have, the better freedom gets as you have many more specialist slots.
 
Autocracy works surprisingly well for culture victories, so long as you're willing to make war to win your culture victory. If you can get the whole world fighting each other, then declare war on the whole world, you end up with a load of stacking bonuses that can bring you to culture victory with massive speed. Its far more micromanagey than the Freedom CV, but its more war-game based, and potentially a little faster.

Quickest way to a Culture Victory is usually to wipe the other top culture civ from map, either yourself or by bribing you friendly neighborhood warmonger like Shaka.
