First target was France. Razed independent Bordeaux and Marseilles before French spawn, then settled my third city on the Dye NW of Paris straight after the French flip turn. Had to wait until 10 turns after French spawn to raze Paris and Lyon, which is enough time to build another settler to found Vittoria on the Stone, right after the French have been eliminated.
Next target was HRE. They had conveniently just captured Rome. My promoted Knights crushed the small HRE force that had managed to outlive the Independents. I also razed Frankfurt to clear some breathing space for Vittoria, at which point HRE went into terminal decline for about the next 200 years. After HRE came the reconquista, followed shortly thereafter by the razing of Lisboa.
I settled my first colony on the Gold in southern Africa, which I used as a base to produce an almost constant stream of Catholic missionaries for most of the remainder of the game. I met the Aztecs but they had built cities in poor locations so I razed them all and founded a replacement on the Silver. Incas capitulated quite easily. They were even willing to accept the ex-native Mayan cities, giving them quite a large territory. Founding a city on the West Coast of North America secured the remaining Gold/Silver resources required for the UHV condition.
After researching Printing Press, Portugal (Azores) and Poland stayed Catholic but England, and Vikings switched to Protestantism. HRE was dead by this point I think. I bribed Russia to switch from Othodoxy to Catholicism to prevent any declaration of war from them. I captured Hamburg from the Vikings and once my Conquistadors reached their core territory they sued for peace and agreed to switch to Catholicism. 2x Catholic missionaries later and all of the Vikings cities had Catholicism.
Strangely, the UHV condition at this point seemed to already believe that there were no Protestant civs in Europe. Either England isn't counted as part of Europe, or there is something awry with this UHV condition check. To be sure, I razed London and got England to switch to Catholicism.
The rest of the game was mostly about spreading Catholicism to enough cities to get 40% of world population. I finally got there in 1615, shortly after the Dutch spawn. Again, something is wrong with the "no Protestant civs in Europe" check, because clearly in this screenshot the Dutch are alive and Protestant but the condition is flagged as true.
I had to wait until 10 turns after the Dutch spawn to annihilate them. My Privateers had sunk all of the Dutch naval units so after razing Amsterdam their civ was extinct. I count the Virtual UHV as completed in 1630AD, even though because of the broken check mechanism I had apparently met the conditions a few turns earlier.
