If you fall behing in tech on immortal you're probably not focussing enough on tech, e.g. prioritise universities, public schools, and growth. Unless you want do some early domination game, even then tech is important.

Good win. One comment though (dunno if you're looking for tips...), your capital does not seem very big. Did you use cargo ships to feed your capital? If not, that might shave of some turns of your victory time. As many people here will know: food cargo ships are amazing.
