I fully agree with the comment on Emperor. I find it is the most balanced and fun. Immortal and Deity aren't more of a challenge, you just have less options to win and it's very formulaic. I find a standard map on Emperor to be consistent and enjoyable.

I can't agree with this one more! I almost feel like "Diplomatic Victory" is really just "Economic Victory". I also would really like to see policies being voted on (such as a global nuke ban) and also have a system to buy support from other nations. I think it's pretty silly each civ only...
