When I make the move to capture the last capital for a domination victory, it hard crashes. I've tried 3 times, and it happens even if I capture the city with a different unit, let a couple of turns pass first, and/or engage in other unrelated combat before the city capture. In all cases it's fine right up until I make the move that should capture the last capital and win the game, and then it hard crashes.

Not your fault, but stuff happens with Civ. Best remedy is to start a new game, and wish for it never to happen twice.
And since rest of us has updated to *.56, I'll bet very few can say anything else.
You could try to reload a save way back (20+ turns), and see how it turns out.
