Accurate country maps

Hey guys and gals,
how do u people create such accurate maps of individual countries?
do u use a special program and then import?
i have no idea other than trying to do a freehand map based on my recollections.

i am trying to create a map of Australia and surrouning islands (NZ and PNG, Timor, Solomons etc.)

Any suggestions??
