Anyone know how to just observe a game?

You need to enable cheats in the ini in the documents folder. Cheatcode=chipotle.
Then use the tilt button to bring up the console. you can type commands there.
Write:
game.aiplay 1000
That will destroy your present player controlled civ and make the AI play against each other.
Then press control+z (or is it x, can't remember), that will reveal entire map.
Sit back and enjoy...
As a bonus, if you press Alt+x you stop the AI autoplay and cycle the civs with alt +x
