I kinda do the same as you, I always wait for Sun Tzu's Wonder but I build a few barracks in my bigger cities just incase war is forced upon me or I decide to wipe someone out first.

Yes - barracks are worth it but you only need a few and if you only build a few or build SZ what is the point of being miltaristic.
The only when I play the Aztecs do I make exception and create many barracks and try and overwealm my neighbours with Jaguar warriors.
In general in the early game I would rather have 3 regular spearmen than 3 veteran warriors so I hold off on a barracks until I have a few cities.
I find a regular spearman exploring can easily handle barbarians and will soon become elite but a warrior can have a tough time out there.
