Can't Overcome Conqured Culture

I really haven't been concentarting on this game much, so I only now noticed that French culture is still very strong in the French cities I conqured more than 600 years ago. What sort of things can be done to increase the percentage of Englishness in my cities. BTW only Paris was captured all the other cities were razed and then built with my own settlers.

build theatres and culture in general. Anyway if the french are dead it really doesn't matter.

Canada has the same problem......
