Let's see,

1) You can give the warrior the complete construction ability and the AI doesn't know to use it.

2) You can give your civs UU the hidden nationality ability and attack the AI anytime without worrying about causing a war.
 
Give your Explorer the Hidden Nationality flag. For some reason, it makes it impossible for the AI to attack or even capture the unit. The other civ will even end up stacking it's units on the same square as your guy. So you could wander around it's territory at any time and pillage at will, and it can't do a thing to stop you. This was a pre 1.29f exploit though, they might have fixed that since.
 
Use a worker as bait. When laying siege to an enemy city bring a worker up with your lines... then move it off to the side of the enemy civ's city. Usually their fast units (chariots, cavalry, etc) will make a B-line straight for the worker and you can then take them out with your own fast units and recapture your bait.

This also works in other situations but this is my favorite ploy. Just remember that scene in braveheart where the cavalry runs down those 5 scots at the fire pit.
 
Along the same lines:

Remove your defenders from a city,and park them just outside. The AI will recognize that the city is weakly defended and send some troops in that direction. When they start to get close, put the defenders back in the city, and remove them from a city at the opposite end of your empire. The AI troops will turn around and make their way to the newly "defenceless" city. A pre-1.29f exploit, don't know how it will work these days.

Exploiting well-known AI stupidities is NOT the same thing as a "cheat".

I guess this is frowned upon. Just learned about it from one of my threads. Apparently its doubly effective since 1.29f.

Draft rushing - Once you've researched nationalism you can draft two conscript level military units from cities over size 6. Then disband them in the city of your choice for shields. This works great from highly corrupt cities with no other real production power, just crank out the farmland around them and then make em whip out that selective services card.

I've never had ICBMs built so quickly before ;)
