What do you mining or terran do you transform to get copper?

If you are asking about getting copper on the terrain (like coal/wine for hills and gold/iron for mountains) then there is none. Copper is not listed as a resource on a terrain type. In the forum just above this one there is a reference thread to Nethog's game page that has an on-line chart for this.

If you are asking about what combination of chosen civ and terrains in a city radius make it more likely to get copper for caravans/freight then somebody else will need to answer that.
