I've downloaded the demo files from 4 or 5 different websites. All of them are the 314MB version. But I'm not able to unzip them without getting a checksum error on the data2.cab file. I've tried using Winzip and WinRAR decompression programs.

Am I doing something wrong? Or am I just having bad luck with the files I'm downloading?

may be bad luck, may be the files are infected with virus.
make sure you downloaded from reliable source and use a download accelerator.

Remember to try before you buy, or you may regret buying it.

The sites should be realiable, 3 of them were the ones that are linked to from the demo page here on civfanatics.

You could have a bad wire (or wireless router). If any of the sites post MD5/SHA1 hashes of the files, you could get a hash tester like fsum to find out if the archives are really corrupted during transfer or if there is a fault in unpacking them (which would point to HW fault). Alternatively, you could hex compare the files you got (like with "fc /b file1 file2") to see if they are different.
